From Suet to Tallow

From Suet to Tallow

Introduction
Ever wondered how we transform humble suet into the versatile, nutrient-rich tallow behind Viva Tallow’s products? At Viva Tallow, we’re passionate about crafting 100% grass-fed tallow from Minnesota family farms, turning a traditional ingredient into something extraordinary for crafting, traditional uses, and more. Join us as we walk through the suet rendering process.
What is Suet?
Suet is the raw, hard fat found around the kidneys and loins of grass-fed cattle. Sourced from Minnesota’s lush pastures, our suet is pure, natural, and free from additives a testament to our minimal ingredients philosophy. This high-quality fat is the starting point for our tallow, prized for its versatility and rich nutrient profile.
The Rendering Process: Step by Step
Rendering is the art of gently melting suet to extract pure tallow. Here’s how we do it at Viva Tallow, with transparency every step of the way:
  1. Sourcing the Suet
We partner with Minnesota family farms committed to grass-fed, sustainable practices. The suet arrives fresh, ensuring the highest quality for our tallow. This local connection is at the heart of our company story, celebrating Minnesota Pride in every jar.
  2. Preparation
The suet is cleaned and trimmed to remove any non-fat tissue. We keep it simple no chemicals, no shortcuts. The suet is then chopped into small pieces to ensure even melting and maximum purity.
  3. Slow Rendering
The chopped suet is placed in a slow cooker over low heat. This gentle process allows the fat to melt slowly, separating the liquid tallow from solid impurities (known as cracklings). Low heat preserves the tallow’s natural qualities, ensuring a clean, smooth result.
  4. Straining for Purity
Once melted, the liquid tallow is strained through cheesecloth to remove any remaining solids. The result? A golden, pure tallow that’s ready for traditional uses or crafting, free from additives.
  5. Finishing and Versatility
The strained tallow becomes the heart of Viva Tallow’s products. Poured into jars and cooled, it forms a creamy, versatile base for crafting or traditional uses. Whipped into a light, nourishing cream, it pampers skin naturally. Blended with lye and oils, it creates rich, handcrafted soaps. Paired with a wick, it crafts soft, natural candles and that’s just the start of its possibilities!
